According to recent studies ice in six out of ten restaurants has more bacteria than water from toilets. This can be a result of poor hygiene or lack of a regular maintenance schedule in place.

Poor ice machine maintenance can result in such deadly strains as Legionella and Pseudomonas. Ice can become contaminated by: food poisoning organisms from raw food and being found in the ice. Other causes include people mishandling the ice, misused cleaning and maintenance chemicals and physical contaminations like dust and dirt.

No business wants to be giving their customers contaminated ice.

To prevent this from happening, the ice storage should be cleaned and disinfected regularly to prevent build up of bacteria and the machine should be serviced at least twice annually to prevent the build up of lime scale and other deposits.
